Tomato Basil Topping Recipe

Each spring, I plant a vegetable garden in my backyard. Every year I plant cucumbers, cherry tomatoes and green peppers, and this year I added some green bean plants.  Most of my garden finished early in September, but I just finished harvesting my tomatoes last weekend.

My cherry tomato plants consistently give me an incredibly high yield. To the point that having 2 plants, we cannot possibly eat all that we harvest. I always use the cherry tomatoes in Greek salad, I make salsa with them, and have made bruschetta in the past. I also gift them to family and neighbours, and still end up with an abundance. This time, I wanted something a little different.

This appetizer recipe could be considered a bruschetta I guess, but I don't classify it that way. You saute the cherry tomatoes until they burst, and serve hot over sliced baguette or pita triangles. The amounts you need will be dependent on how many people you want to serve. As an appetizer for 2 people, you would want between 16 and 20 cherry tomatoes, and 2-3 cloves of garlic. Increase as needed.

  1. Drizzle olive oil into pan, add crushed garlic and heat over medium
  2. Add cherry tomatoes and saute until they burst (once they get hot, you can help this along by squishing with a spatula)
  3. Sprinkle with basil and pepper to taste
  4. Slice a baguette, or cut pita into triangles
  5. Spoon tomato mix onto bread
  6. optional: add some feta or shredded mozarella
This isn't exactly a fall recipe, but since it's pretty much the end of fresh tomatoes, I thought it was a good time to post it.  Also, it is possible to ripen your tomatoes indoors - so don't fret if you still have lots of green tomatoes on the vine!
