Mint Topped Chocolate Cookies

A few years ago a friend of mine posted this recipe (not sure of original source) and it looked so good, that I couldn't pass up making it.



I was NOT disappointed and it became a favorite of mine - super easy to make, tastes good and your guests will thank you!

How to make mint chocolate chip cookies


What you need: 

1 pkg Devils Food Chocolate Cake Mix
2 eggs                              
1/2 cup shortening
1 TBS water
1/2 cup icing sugar (for rolling)
thin mints for topping

Makes approx. 40 cookies

In a large bowl, mix together cake mix, shortening and water;  use dough to form 1" balls and then roll in the icing sugar;  place 2" apart on an ungreased baking sheet.

Bake in oven (pre-heated to 350 degrees) for 8-10 minutes; remove from oven and immediately place thin mint on top of each cookie; then place cookies on a cooling rack
