Super Simple St. Patrick's Day Cupcakes

I like to make a themed dessert for St. Patrick's Day, but this year it crept up on me.  When the kids woke up, they wanted to make cupcakes so I told them we would make them for St. Patty's Day!

They are really easy to make - take your favourite vanilla cake recipe (or a boxed mix). Prepare as directed, and add in a small amount of green food colouring.

Pour into your cupcake holders and bake as directed.  Remove from oven and cool completely.  Frost with your favourite buttercream icing (white or tinted green) and then sprinkle with some green sugar or sprinkles.

If you wanted to get more creative, you could use a 1M tip to pipe the icing on, or you could pipe on a shamrock - we went for easy and quick today!
