Chop up your veggies (cucumber, tomato, onion, feta cheese - black olives if you use them)
Make your dressing (1/3 cup olive oil, 2 tsp oregano or basil)
Add dressing to salad, mix together and enjoy!
This is a great compliment to any meal, however in the summer, when it is too hot to cook really, I will add leftover grilled chicken and it can be a meal on it's own. Sometimes I also throw in couscous or quinoa, black beans and chick peas.
